Ingredients

  • Cake:
  • 175 g unsalted butter softened
  • 175 g caster sugar
  • 3 large eggs
  • 3 medium ripe bananas mashed (about 300g mashed)
  • 1 tsp vanilla extract
  • 225 g self-raising flour
  • 1 tsp baking powder
  • ½ tsp ground cinnamon
  • Cream Cheese Frosting:
  • 150 g full-fat cream cheese room temperature
  • 75 g unsalted butter softened
  • 200 g icing sugar sifted
  • ½ tsp vanilla extract

Method

  1. Preheat oven to 180°C (160°C fan / Gas 4). Grease and line two 18cm tins.
  2. Cream butter and sugar until pale and fluffy.
  3. Beat in eggs one at a time, adding a spoonful of flour with the last egg.
  4. Beat in mashed banana and vanilla.
  5. Fold in flour, baking powder and cinnamon.
  6. Divide between tins and bake for 25–30 minutes until a skewer comes out clean.
  7. Cool completely on a wire rack.
  8. Beat butter alone, then add cream cheese, icing sugar and vanilla for the frosting.
  9. Sandwich and top the cooled sponges with the frosting.

Notes

Use very ripe, spotty bananas for the best flavour.
Add a spoonful of flour with the last egg to prevent curdling.
Cool the sponges completely before frosting, or it will slide off.
Stop beating the frosting as soon as it's smooth to keep it spreadable.
Freeze the unfrosted sponge for up to 3 months; frost fresh once defrosted.
