Ingredients

  • Dressing:
  • 2 anchovy fillets finely mashed
  • 1 garlic clove crushed
  • 1 large egg yolk
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 100 ml olive oil
  • 30 g Parmesan finely grated
  • Freshly ground black pepper
  • Salad:
  • 2 romaine lettuce hearts torn or chopped
  • 2 slices day-old bread cubed
  • 2 tbsp olive oil
  • Extra Parmesan shavings to finish

Method

  1. Toss bread cubes in oil and bake at 190°C (170°C fan) for 10–12 minutes until golden.
  2. Mash anchovies and garlic into a paste.
  3. Whisk in egg yolk, mustard and lemon juice.
  4. Whisk in the oil very slowly to emulsify.
  5. Whisk in the Parmesan and season with pepper.
  6. Toss the lettuce with the dressing.
  7. Add the croutons and toss gently.
  8. Top with extra Parmesan and serve immediately.

Notes

Don't skip the anchovies — they're essential for an authentic, savoury dressing.
Add the oil very slowly to avoid the dressing splitting.
Use day-old bread for the crispest croutons.
This dressing contains raw egg; use pasteurised egg yolk if you have any concerns.
Best assembled and eaten immediately, as dressed lettuce wilts quickly.
